Raspberry compote

This berry compote is one of my absolute favourite porridge toppers and the sweet berry flavours really make my morning porridge more interesting. If you leave it to cook for longer it becomes think like jam and can be spread on toast, which is equally delicious. Not only is this compote yummy it also is so much healthier compared to syrup so it is much better option to put on porridge!

Ingredients:
- Large handful of frozen raspberries (can use other berries)
- Dash of maple syrup
- 1-2 tbsp of chia seeds (depending on desired consistency)
Method:
Add a splash of boiling water to a saucepan.
Add the frozen berries and cook them over a medium heat until they defrost
Pour in the maple syrup and add the chia seeds
Cook until it reaches the desired consistency
Enjoy!
